I was raised by the most incredible parents. Both refugees to Canada from Afghanistan, and growing up they fed us plenty of delicious Afghan food. I hope through these recipes you feel more of a connection to the beauty of Afghanistan and its people. Thank you for being here and for your support ❤️

– The ICRC works in assisting victims of war and ensures humanitarian protection of marginalized populations. My sister worked with the ICRC for several years and completed a one-year mission with them in Afghanistan. She speaks very highly of the work they’ve done in Afghanistan over the last 30+ years.

👉 2. The International Rescue Committee (IRC): &
– The IRC is a global non-profit organization that has worked in Afghanistan since 1988, providing “displaced families with shelter, clean water, sanitation and other basic necessities,” according to its website, as well as education and cash assistance.

👉 3. Women for Women International:
– Women for Women International is a non-profit organization dedicated to helping female survivors of war. According to their website, their “training helps women know and defend their rights, lead mentally and physically healthy lives, influence decisions at home and in their communities, generate income, and save money for the future, contributing to economic self-sufficiency in their lives and for their families.”

I have never eaten such delicious zucchini!
Chop 2 zucchini into 1/2 inch thick cubes or quarter moons.
If zucchini is medium size, half moons are perfect.
And baby zucchini could be sliced into rounds.
Salt 1½ tsp
Paprika 1 tsp
All purpose flour 1 tbsp
Preheat large ceramic non-stick skillet with tall sides
on high heat and then swirl oil. Add zucchini
Cook on medium heat for 10-15 minutes, stirring maximum 2 times.
After zucchini is cooked, sprinkle with herbs and freshly grated garlic.
Soy sauce 1 tbsp
