Hot and crispy bondas made with spring onions is a unique snack that you can enjoy with your cup of chai.
SPRING ONION BONDA
Ingredients
3-4 spring onions
1 tsp red chilli powder
¼ tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
½ tsp garam masala powder
½ tsp black pepper powder
Salt to taste
10-12 curry leaves, chopped
2 tbsps chopped fresh coriander leaves
¼ cup rice flour
1 cup gram flour (besan)
Oil for deep frying
Coffee or tea to serve
Method
1. Thinly slice spring onions with the greens. Transfer them into a bowl. Add red chilli powder, turmeric powder, cumin powder, coriander powder, garam masala powder, black pepper powder, salt, curry leaves, coriander leaves, rice flour and gram flour and mix well. Add ¼ cup water and mix till well combined and a thick batter is formed.
2. Heat sufficient oil in a kadai.
3. Take small portions of the batter and shape it into a ball. Slide in a few of them at a time into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper.
4. Serve hot with coffee or tea.
