चिंचं गुळाची आमटी | Chincha Gulachi Amti | Sanjeev Kapoor Khazana



A comforting, sweet and sour dal which is flavoured with tamarind pulp, sweetened with jaggery and is very popular in Maharashtrian homes. Pair it with rice for a hearty meal!

CHINCHA GULACHI AMTI

Ingredients

3 tbsps tamarind (chincha) pulp
1 tbsp chopped jaggery (gul)
2 cups cooked split pigeon peas (toovar dal)
2-3 tbsps oil
¼ tsp asafoetida (hing)
1 tsp mustard seeds
2-3 green chillies, chopped
10-15 curry leaves
¼ tsp turmeric powder
Salt to taste
1 tbsp goda masala
2 tbsps chopped fresh coriander leaves
Steamed ambe mohar rice for serving

Method

1. Heat oil in a kadai. Add asafoetida, mustard seeds and once they start to splutter, add green chillies, curry leaves and sauté for a few seconds.
2. Add cooked dal and mix. Add turmeric powder, salt, goda masala and mix.
3. Add jaggery, 3 cups water and mix well. Add tamarind pulp and mix.
4. Cook on medium heat for 4-5 minutes. Add coriander and mix well.
5. Transfer in a serving bowl and serve hot with steamed ambe mohar rice.

दाल गंडोरी | Dal Gandori | Sanjeev Kapoor Khazana



A classic Maharashtrian dal recipe where toor dal is cooked along with spinach and tempered in a peanut-coconut masala.

DAL GANDORI

Ingredients

1½ cups split pigeon peas (toovar dal), soaked for 1 hour and drained
10-15 garlic cloves, crushed
1½ inch ginger, chopped
¼ tsp asafoetida (hing)
7-8 light green chillies, chopped
2 medium green tomatoes, chopped
1 cup shredded spinach leaves
1 cup chopped sorrel leaves (ambadi)
Salt to taste
2- 3 tbsps oil
2-3 tbsps raw peanuts
2 tsps cumin seeds
½ cup sliced dried coconut
¼ tsp red chilli powder
¼ tsp turmeric powder
2 tsps kaala masala
2 tbsps chopped fresh coriander
Steamed rice for serving

Method

1. Heat a pressure cooker, add toovar dal, water, garlic cloves, ginger, asafoetida, green chillies, green tomatoes, spinach leaves, sorrel leaves, salt and mix well.
2. Cover with the lid and cook on medium heat till the pressure is released 3-4 times. Open the lid once the pressure settles completely and mash the dal properly.
3. For the tempering, heat oil in a kadai. Add peanuts, cumin seeds and sauté for a minute.
4. Add dried coconut and sauté till the coconut turns golden brown.
5. Add red chilli powder, turmeric powder, kaala masala and mix well.
6. Add the cooked dal, coriander and mix well. Cook for 2-3 minutes on medium heat.
7. Transfer in a serving bowl and serve hot with steamed rice.

Dal Tadka
Total – ½ cup Dal for 4 servings.

Ingredients:
1/4 cup masoor dal / dehusked brown lentils
1/8 cup moong dal / skinned, split green gram
1/8 cup tuvar / arhar dal / pigeon pea lentils
You can use any combination amount ratio

Water – to wash, soak, and cook
Haldi – ½ tsp
Salt – 1 tsp
Ghee – 2-3 tbsp
Oil – 0.5 – 1 tbsp
Jeera – 1 tsp
Hing / Asafoetida – ¼ tsp
Dried Red Chilli – 4
Curry leafs – 1 sprig
Ginger – 1 ½ inch
Garlic – 5- 8 cloves
Onion – 1 small, finely chopped
Tomato – 1 small, finely chopped
Green chili – 2
Haldi – a dash
Red Chilli Powder – 1 tsp
Dhaniya powder – 1 tsp
Kasuri methi – ½ tsp
Salt – to season
Coriander Leafs – 1 tbsp
Butter – 1 tbsp

Oven For Baking – (28liter is good enough)
